What
1/4 cup tahini
1/4 cup lemon juice
2 tbsp garlic, minced
1 can (~15.5oz) chickpeas*
1 tsp cumin
salt, to taste
water, as needed
How
Blend tahini and lemon juice until color lightens, ~2 minutes.
Blend in garlic, salt, and cumin.
Add chickpeas**, half at a time, blend until smooth.
For a smoother texture, blend in 1 tbsp water*** at a time until desired smoothness is reached.
*Read: Garbanzo Beans.
**remove skins from the chickpeas for a smoother texture, and if you have an extra 20 minutes of your life to spare (it's tedious, tedious work).
***A ton of recipes will call for olive oil to smoothen. Unfortunately, olive oils often don't blend well and can leave an acrid taste, so unless you've spent a boatload on the really high-quality stuff, or are comfortable with a different oil, just use water to attain a smoother texture.
