What
1 lb. Chicken breast
2 tbsp butter
2 cloves garlic, minced
1/2 lb. penne
1 1/2 cups chicken broth
1 cup milk
3 oz. cream cheese
1/3 cup pesto
1/4 cup parmesan cheese, grated
3 cups spinach
1/4 cup sun-dried tomatoes
pepper, to taste
crushed red pepper, to taste
How
Cube chicken breasts and saute in butter on medium heat until browned.
Add garlic and saute until fragrant, ~1 minute.
Add chicken broth & penne, stir & cover.
Bring to boil, reduce heat & simmer until pasta is cooked, stirring occasionally.
Mix in milk, cream cheese, and pesto.
Once blended, add grated parmesan, spinach, and tomatoes. Cook until spinach is wilted.
Top with red pepper flakes & pepper.
