What

  • 1 (9 inch) gluten-free graham cracker pie crust

  • 2 (8 ounce) packages cream cheese

  • 1/4 cup sugar

  • 1 1/2 tablespoons corn starch

  • 2 tablespoons lemon juice

  • 1 tsp lemon extract

  • 2 eggs

  • 8 oz. yogurt or sour cream

How

  1. Preheat oven to 350 degrees F

  2. Beat cream cheese and sugar in a bowl

  3. Mix in all other ingredients

  4. Pour mixture into pie crust

  5. Bake for 50 minutes

  6. Let cool to room temperature

  7. Chill for 4 hours then serve
