WHAT
2 chicken breasts
1 1/2 tablespoon taco seasoning
1/4 teaspoon salt
1 lime, divided
2 tablespoon olive oil, divided
3 cups romaine lettuce, chopped
1 avocado, sliced
1 tomato, diced
1/2 cup black beans, rinsed
1/2 cup corn, rinsed
1/2 cup Greek yogurt
1/4 cup cilantro
1/4 teaspoon salt
HOW
Mix chicken breasts, taco seasoning, cumin, salt, 1/2 lime juice and 1 tablespoon olive oil in a bowl.
Marinate for 10 minutes.
Cook chicken breasts in skillet on medium-high heat until fully cooked.
Rest chicken for 5 minutes, then slice.
Blend Greek yogurt, cilantro, 1/2 lime juice, 1 tablespoon olive oil, and salt in a blender until smooth.
Place a bed of chopped lettuce on plate.
Top with remaining ingredients, and dressing.
